If you’re a busy chick like me who loves homemade desserts but can’t spend all day baking; this strawberry tart recipe is perfect because it only requires 5 ingredients. When I’m cooking for a dinner party, dessert is usually the last thing I’m thinking about only because the actual dinner takes so much preparation. I love making desserts that are easy and I can do with my eyes closed. If you’ve been reading my blog, you also know that I love fruit based desserts like pies and tarts. This recipe has become my go-to dessert because it’s so yummy and it’s super easy to make. I made it for Easter dinner last Sunday and everyone loved it especially with vanilla ice cream on top. It was light and not too sweet which was perfect for my parents who are not into rich desserts. It kind of tastes like baklava with strawberries. Pre-made pastry dough has become my saving grace in many last minute dessert situations. It literally cuts the baking time in half so that you can focus on dinner prep and decor. Make this 5 ingredient strawberry tart for a super easy and quick dessert!
You will need:
- 1 sheet frozen puff pastry, thawed
- 1/2 cup unsalted, shelled pistachios
- 2 tablespoons sugar
- 5 cups thinly sliced strawberries (about 1 1/2 pounds)
- 1/4 cup apricot jam, warmed
- All purpose flour for rolling
Preheat oven to 350 degrees. On a lightly floured surface, roll out puff pastry to a 12 x 16 inch rectangle.
Transfer to a parchment-lined baking sheet. Freeze until firm, about 10 minutes. With a fork, prick pastry all over. To prevent pastry from rising, top it with a sheet of parchment paper and stack another rimmed baking sheet on top. Bake until the pastry is golden brown, 20 to 25 minutes.

Cut the strawberries into thin slices. In a food processor, combine 1/4 cup of pistachios and sugar and process until pistachios are finely ground.
Sprinkle mixture on pastry, leaving a 3/4 border. Bake until pastry is deep golden and pistachio mixture turn golden, 15 minutes. Roughly chop remaining 1/4 cup pistachios.
Brush border with warmed jam.
Sprinkle chopped pistachios on border.
Arrange strawberries on the pistachio mixture and brush berries with jam.
Serve warm or at room temperature with vanilla ice cream.
